Ingredients
For the Mascarpone Filling:
500g mascarpone cheese
1 cup whipping (heavy) cream
¾ cup granulated sugar
4 large egg yolks
2 tablespoons What The Fog microground tea powder
For the Ladyfingers Layer:
24-30 ladyfingers (adjust based on your dish size)
4 tsp What The Fog microground tea powder (or 1½ cups strongly brewed Earl Grey tea)
2 tablespoons granulated sugar or Simps Vanilla Syrup
2 tablespoons rum or brandy (optional)
For the Topping:

Instructions
Prepare the Tea
Add 4 tsp of What The Fog powder in a bowl.
Boil 12 oz water and add to bowl.
Whisk gently until powder is fully absorbed.
Stir in 2 tablespoons of granulated sugar or Simps Vanilla Syrup.
(Optional) Add rum or brandy. Set aside and let cool.
Make the Mascarpone Filling
In a mixing bowl, whisk the egg yolks and ¾ cup of granulated sugar until the mixture is light and fluffy.
In a separate bowl, whip 1 cup of heavy cream until it forms soft peaks. Gently fold the whipped cream into the egg yolk mixture.
Add 500g of mascarpone cheese and 2 tablespoons of What The Fog powder to the mixture. Continue folding until the mixture is smooth and well combined.
Assemble the Tiramisu:
Dip each ladyfinger briefly into the brewed tea mixture, ensuring they are soaked but not soggy.
Arrange a layer of soaked ladyfingers in the bottom of your serving dish.
Spread half of the mascarpone filling over the ladyfingers.
Add another layer of soaked ladyfingers on top of the filling.
Finish by spreading the remaining mascarpone filling over the second layer of ladyfingers.
Chill and Serve: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavours to meld and the dessert to set.
